Preperation

How to give a beautiful color to your homemade butter?

Step 1 (optional)

Peel and finely grate 1 carrot.

Heat the carrot with 60 ml of milk in a small saucepan, until bubbles form on the surface.

Using a square of cheesecloth (a cloth for food use), filter the carrots to obtain an orange-colored milk.

Pour the milk into the bowl of your food processor.

Discard the leftover carrot.

2nd step

Pour the crème fraîche into the bowl of your pastry processor, fitted with the flat beater.

Add the salt and cover the appliance with a tea towel or small towel.

Warning : Trust me, it is important to cover the device with a tea towel. Otherwise, you will put it everywhere!

Start the robot at maximum speed.

Step 3

Continue beating the mixture, monitoring it frequently.

At first, the mixture will turn into whipped cream.

Then, the cream becomes grainy.

Gradually, it separates into butter and buttermilk.

Since buttermilk is runny, this is where the food processor splashes a lot - don't forget to cover it with a tea towel!

Then, the grains of butter clump together.

Your butter is ready when it begins to thicken and clings to the mixer.

How to drain the homemade butter?

Step 4

Using a colander, strain your homemade butter in a bowl to remove the buttermilk from its surface.

Should you rinse the butter under cold water?

Step 5

To remove all the buttermilk, rinse the butter under cold water while squeezing it with your hands or with a spatula.

Keep squeezing, until the water becomes clear.

Finally, mold your butter into a lump or plate.
