My Grandmother's Delicious Crispy Bugnes Recipe (Easy, Quick).
Bugnes, atria, loops, wonders ...
Whatever name you give them, these carnival donuts are a real treat.
And I still look forward to Mardi Gras to eat it.
It's a real pleasure for my taste buds, a pleasure that reminds me of my childhood!
Fortunately, my grandmother who lived in Lyon gave me her authentic recipe for Lyon bugnes.
It is therefore a family recipe for deliciously crispy bugnes that I share with you today.
Don't worry, it's easy to make and very economical. Look :
Ingredients
- 250g of flour
- 70 g of butter
- 2 eggs
- 10 g of powdered sugar
- 1 liter of sunflower oil
How to do
1. Pour the flour into a container.
2. Make a well in the flour.
3. Put the sugar in it.
4. Mix.
5. Add the eggs.
6. Mix again.
7. Melt the butter and pour it into the preparation.
8. Mix well to obtain a thick and homogeneous paste.
9. Make a ball with the dough.
10. Let the dough rest for 2 to 3 hours at room temperature.
11. Put a little flour on the work surface.
12. Cut the ball in half to spread it more easily.
13. Using a rolling pin, roll out the dough in a layer of about 1/2 cm.
14. Cut diamonds in the dough. You can use a roulette wheel like this. Otherwise a simple knife will do the trick.
15. Make two small notches in each diamond.
16. Heat the oil to 170 ° / 180 ° in a deep pan.
17. Dip the bugnes in the hot oil. You can put more than one at a time.
18. As soon as the bugnes start to brown (after a maximum of one minute), turn them over, using a skimmer.
19. Place the bugnes in a dish covered with absorbent paper.
20. Sprinkle them with powdered sugar.
21. Repeat until all the dough is gone.
Results
And there you have it, your crunchy homemade bugnes are already ready to be devoured :-)
Easy, quick and delicious, isn't it?
Just wait for them to cool down before you feast!
These Lyon bugnes have a beautiful yellow / golden color that is super appetizing.
As this recipe does not contain yeast, they are not too thick and above all they are super crispy.
And the more you roll out the dough, the thinner it will be.
They keep well for several days but in general, they disappear quite quickly!
Bonus tip
At home, we are used to making plain sugar bugnes.
But you can add more ingredients very well.
For example, you can put a little orange blossom in the dough or even a little rum, ginger, vanilla or even cardamom depending on your taste.
You can also replace the powdered sugar on the bugnes with icing sugar.
