The best way to wash aromatic herbs is to run them under cool water.

Storing tender herbs

Tender fine herbs preserved in jars.

For tender herbs: parsley, cilantro, basil, tarragon, mint and dill.

Once your tender aromatic herbs have been washed and wrung out, cut off the base of the stems and remove any yellowed or wilted leaves.

Then put the herbs in a large jar with about 2 to 3 cm of water.

For the parsley and the coriander, cover the jar with a zippered freezer bag or with stretch wrap, but without squeezing the herbs too tightly, as in the photo above.

All you have to do is put the jar in the fridge. If your jar is large enough, you can close the lid to cover the herbs.

On the other hand, to preserve the basil, do not cover the leaves and place the jar in a lighted place, but without direct exposure to sunlight.

Also remember to change the water in the jar if it changes color or the water becomes cloudy.

Storing robust herbs

How to keep herbs strong.

For robust herbs: rosemary, thyme, oregano, marjoram, sage, savory and chives.

Arrange the herbs in a single layer and lengthwise on a lightly moistened piece of paper towel.

Then roll the piece of paper towel with the herbs inside, as in the photo above.
