At the start of fall, cucumber is one of the vegetables that can still be found at a very affordable price.

However, many French people shun it for one simple reason: it is considered difficult to digest.

I guess once you wash it you start by peeling it thoroughly. Big mistake!

It is indeed the skin of the cucumber which allows it to be easily digested. If you peel it, it immediately becomes heavy to digest and you can only decree that this vegetable is not welcome on your table. Which would still be a shame!

Be careful though to wash your cucumbers well before eating them, all pesticides and other products remain nestled in the skin if you are not careful to clean them well!
