There is an effective trick to keeping mayonnaise for longer. Just add an acidic ingredient like vinegar or lemon juice.

How to do

1. Take the ingredients out of the refrigerator ahead of time.

2. Place the egg yolk in a bowl.

3. Mix it with salt, pepper and a teaspoon of vinegar.

4. Or possibly add a little lemon juice.

5. Add the mustard and mix.

6. Pour in the oil, beating the ingredients.

Results

There you go, you can now keep your homemade mayonnaise for longer :-)

You can keep it for a week. Beyond that, it is at your own risk even if I have already done so!

Why it works

Vinegar and lemon help lower the pH. The acidity of vinegar and lemon helps destroy bacteria. Industrial mayonnaise also uses this trick.

After preparing your mayonnaise, leave it for a few hours at room temperature before putting it in the refrigerator.

On the other hand, if it's very hot, don't leave your mayonnaise outside the fridge.
