Easy And Economical: The Delicious Homemade Flan Pie Recipe.
At home, we are very fond of good desserts without fuss but very greedy.
And there is one that my husband and my children particularly like: the custard tart.
So the purists will tell me that this is not the exact recipe for "real Parisian flan" ... It's true.
But this delicious custard tart is always a hit. I have been making it for years and I am asked for the recipe every time.
And in addition, it is very easy to make and economical,
The little secret is the wholemeal flour mixed with almond powder which gives a delicious roasted taste to the pie.
And of course, don't forget to caramelize it lightly on top for maximum pleasure :-) Yum!
So here is the very tasty recipe for homemade flan pie :
What you need
Preparation time : 25 mins
For the dough:
- 220 g of wholemeal flour
- 30 g of almond powder
- 3 tablespoons of cane sugar
- 1/2 teaspoon of salt
- 125 g of butter
- 1 whole egg
For the custard:
- 1/2 l of whole milk
- 2 whole eggs + 2 egg yolks
- 80 g of cane sugar
- 90 g of cornstarch
- 1 teaspoon of natural vanilla extract
For the finish:
- 2 tablespoons of cane sugar
- 1 knob of butter
How to do
1. In a bowl, mix all the "dry products" of the dough: flour, ground almonds, salt and sugar.
2. Add the fresh butter cut into pieces.
3. Crumble it with your fingertips to form a sort of "sand" with the flour.
4. Add the whole egg.
5. Work the dough by hand until it forms a uniform ball. Add a little flour if it sticks too much to the fingers.
6. Wrap the dough ball with cling film and let it rest in the refrigerator for 30 minutes.
7. Take the dough out of the fridge and roll it out into a thin layer using a floured rolling pin.
8. Put it in a tart mold about 25 cm in diameter that you have lightly buttered beforehand.
9. Preheat your convection oven to 180 ° C.
10. In another bowl, beat the 2 whole eggs, the 2 egg yolks and the cane sugar with a whisk. Blanch them well.
11. Add the vanilla extract and mix.
12. Still in the same bowl, gradually add the cornstarch, stirring vigorously to avoid lumps.
13. Then slowly pour in the cold milk and mix.
14. Then put this preparation in a saucepan.
15. Heat over low heat and stir constantly with a whisk. The dough of the custard will thus gradually thicken. Be careful that this does not catch the bottom of the pan.
16. Once the consistency has thickened, pour the still hot preparation into the pie dish.
17. Bake the custard tart for at least 30 minutes depending on the power of your oven.
18. Shortly before the end of cooking, spread the knob of butter on top of the pie and sprinkle 2 tablespoons of cane sugar.
19. Let everything lightly caramelize for 2 minutes under the grill of the oven. Watch the cooking carefully so that the custard does not especially burn!
20. Take the custard tart out of the oven and let it cool on a wire rack.

And There you go ! You made a superb homemade custard tart in no time :-)
Very easy, inexpensive and delicious, this recipe smacks of our childhood memories, right ?!
Believe me, you will make people happy at snack time!
When leaving the oven, the pastry must be golden brown to be crisp, especially the bottom of the tart.
The custard must for its part be "shaky" (it will solidify even more as it cools) and form a thin caramelized film on the top.
Additional advice
- I prefer to eat this lukewarm pie. But it is also very good after having left it for an hour in the fridge.
- You can replace the vanilla extract with a sachet of vanilla sugar. Even better, infuse a split vanilla bean for 10 minutes in the milk slightly heated in a saucepan.
- For amateur adults, 1/2 tablespoon of rum in the custard provides a delicious aroma.
