And there you go, your homemade kombucha is already ready :-)

Easy, convenient and economical, isn't it?

You made your probiotic and thirst quencher yourself.

Kombucha is an acidic, slightly sparkling drink that should be drunk chilled.

It should therefore be put in the fridge where you can keep it for a week.

You can drink it as an aperitif or as a cure. In both cases, you will benefit from all its virtues for your health!

Additional advice

- The mother of kombucha is a fungus (a symbiote). It is a viscous and whitish membrane a few centimeters thick. You can buy a kombucha mother on the internet, in health food stores, or find a free one on some forums. Or, you can make it yourself, by following this recipe.

- In step 10 of the recipe, take a little liquid and the mother and keep it in the fridge, in an airtight glass box. Like that, you will already have your mother to make your next kombucha.

- From the 8th day, you know your drink is ready when it smells like cider.

- If the smell is unpleasant or if mold has formed, it is better to discard the drink and start over.

- If you don't like black tea, replace it with green tea.

- You can also use unrefined brown sugar or whole cane sugar, rapadura, instead of white sugar.

- Do not hesitate to flavor your drink with ginger, citrus zest, basil leaves or mint.

- The bottle in which you store the kombucha must be pressure resistant.

- Kombucha is slightly alcoholic (between 0.5% and 3%). It is therefore not recommended for pregnant women and children to drink it.

- Avoid using metal or ceramic containers which present a greater risk of contamination. Instead, choose glass containers.

- Kombucha is rich in sugar. It is better not to drink more than 2 or 3 glasses per day.

The benefits of kombucha

Kombucha is a thousand-year-old drink traditionally consumed in Eastern Europe and Asia.

It is a fermented drink, called "alive": it is sweet tea which macerates with a mushroom.

The sugar is then transformed into micro-organisms and thanks to fermentation, it is enriched with molecules: lactic acids, vitamin B and enzymes.

This probiotic drink would be beneficial for digestion and strengthen the immune system.

It would also be detoxifying, energizing and antioxidant.
