Quick, Easy and Too Good: The Chicken Mozzarella Recipe in Tomato Sauce.

It's simply pan-fried chicken, coated in a tomato sauce and melting mozzarella.
Everything is ready in less than 30 min!
The chicken fillet is seared in a pan, then coated with a tomato sauce and finally garnished with a slice of mozzarella.
Then just grill everything until the cheese bubbles and is golden and delicious. Mmmm too good!
This homemade recipe only takes 30 minutes to make but to taste, it looks like this sauce has simmered for long hours!
And when I say 30 min, I'm super wide! It's more of a chicken recipe cooked in 6 or 10 minutes, while the pasta cooks in a saucepan next to it.
After it takes 10 minutes to simmer gently. And There you go ! Before you even know it, the dish is already on the table.
The whole family will smell the exquisite scent of this homemade recipe for miles around and rush to the table!
Did you guess what the secret ingredient is? This is a tablespoon of sundried tomato pesto!
I love putting it in my soups and also in this chicken mozzarella recipe. The pesto helps bring out all of those natural flavors.
Regular pesto can also do the trick, if that's all you have on hand.
But try at least once to make this recipe with sundried tomato pesto. Believe me, it makes all the difference!
I usually serve this dish with linguini because this sauce goes perfectly with pasta.
You can also toast slices of bread as this dish is begging to be gravy!

Ingredients for 4 persons
- 4 small chicken fillets
- 1 tablespoon of olive oil
- 1 tablespoon of chopped garlic
- 70 g of chopped onions
- 1 can of crushed tomatoes (400 g)
- 1/2 teaspoon of mixed Italian spices and red peppers
- 1/4 teaspoon of dried basil
- 1 tablespoon of sundried tomato pesto
- Salt and pepper + 60 ml of water
- 4 slices of mozzarella or 150 g of grated mozzarella
- Optional: chopped fresh basil or parsley + pasta or toast
How to do
1. Sprinkle a pinch of salt and pepper on each side of the chicken fillets.
2. Heat some olive oil in a non-stick ovenproof skillet.
3. Add the chicken to the pan and cook for about 5 minutes per side, until the chicken is cooked through.
4. Remove it from the pan and put it on a plate.
5. If you plan to serve it with pasta, heat the pasta water and prepare it according to the directions on the package.
6. Preheat the oven in broil mode.
7. Add the onions to the remaining oil in the pan. If there is no more, add half a teaspoon of oil.
8. Sauté the onions in it for 3 minutes until softened.
9. Add the garlic and cook for 30 seconds.
10. Add the crushed tomatoes, spices, red pepper, dried basil and pesto then mix well.
11. When the sauce is about to simmer, add 60 ml of water.
12. Lower the heat, cover and simmer for about 10 minutes, until the sauce thickens a little.
13. Season with salt and pepper.
14. After placing the chicken fillets in the sauce, cover them with the sauce.
15. Cover each fillet with a slice of mozzarella.
16. Place the dish under the grill for 2 min, until the cheese is cooked through and tender.
Results
And there you go, your mozzarella chicken in tomato sauce is already ready :-)
Easy and quick to do, isn't it? And it's so good!
All you have to do is garnish the dish with chopped parsley or basil.
Best to serve this dish with pasta or toast and a salad.
You will see that the whole family will love it!
Additional advice
- When the sauce is ready, place the chicken fillets in the pan. Using a tablespoon, cover the chicken with a little sauce. This prevents the meat from drying out in the oven.
- I highly recommend using sundried tomato pesto for this recipe. It really adds a unique flavor to the sauce and makes it look like it's been simmering all day. But a basil pesto will also be suitable for this recipe.
- In addition, you can put more or less red pepper, according to your tastes. If you want a less spicy sauce, don't add it.
- If you make too much sauce, you can freeze it.
