Tomato and Zucchini Lasagna: the Easy and Cheap Lasagna Recipe.
Lasagna isn't always made with a bolognese sauce.
There are delicious variations, especially with vegetables, which are cheaper.
How about tomato and zucchini lasagna?
Serve with ham or salmon, if you wish, for a complete dish.
Ingredients for 6 people
- 1 packet of lasagna plates
- 4 zucchini
- 6 tomatoes
- 2 stalks of celery
- 3 onions
- 400 g of tomato sauce (canned)
- 400 g of ricotta
- 100 g of grated Gruyere
- 90 g of parmesan
- 50 cl of béchamel
- 5 sprigs of thyme
- Salt and pepper
- Option: 50 g of pine nuts
How to do
1. Preheat the oven th. 6 (180 °).
2. Wash, cut your zucchini into slices.
3. Boil and peel your tomatoes.
4. Cut 3 tomatoes into slices and 3 into cubes.
5. Slice the celery, cut it into cubes.
6. Peel and chop the onions.
7. In a sauté pan, sweat the onions and celery with 2 tablespoons of olive oil.
8. Add the diced tomatoes, tomato sauce, thyme.
9. Salt and pepper and cook for 5 min.
10. In a bowl, combine the ricotta, Parmesan and, if desired, pine nuts.
11. In a dish, arrange the lasagna sheets and then a layer of the ricotta mixture.
12. Then place a layer of zucchini then sliced tomatoes.
13. Then add the béchamel sauce, then the tomato preparation.
14. Continue like this to the top.
15. Finish with a layer of lasagna plates covered with béchamel and gruyere.
16. Cook for about 50 minutes and serve hot.
Results
There you go, your tomato and zucchini lasagna are ready to be tasted :-)

You can also serve this dish with a green salad for a complete and balanced meal.
