Fortunately, there is a simple trick to using them and avoiding food waste.

The trick is tomake a delicious homemade tomato coulis. Look, it's very simple:

- overripe tomatoes

- saucepan

- basil

- olive oil

- Herbs

- salt pepper

- glass jar

How to do

homemade tomato coulis

1. Put the tomatoes under water.

2. Remove the tail and the rotten parts.

3. Cut the tomatoes in half if they are too large.

4. Place them in a saucepan.

5. Pour a glass of water into the saucepan.

6. Add two tablespoons of olive oil.

7. Season to your liking with salt, pepper, herbs, basil ...

8. Simmer until the tomatoes have melted.

9. Let cool.

10. Then put in an airtight glass jar.

Conservation

To preserve your coulis, pour a drizzle of olive oil on top of the jar before putting the lid back on.

Why ? Because it forms an airtight film that prevents the grout from molding.

Our grandmothers kept all their sauces this way.

Personally, I put the coulis in several small glass jars. Thus, I open them as and when I need them and I avoid waste.

Uses

You can use this tomato coulis with pasta, on a margherita pizza, in a sauce for roast veal or to make homemade ketchup for example.
